Herbaceous lift to fried chicken
FRIED chicken is such a ubiquitous dish that we don’t often give it much thought. That is why when an Indonesian friend made this for a home party, I was surprised how much I enjoyed it and immediately asked her for the recipe. So here’s a shout-out to Emi Yanti Lubis who shared her family recipe with us. Turns out this is not just any fried chicken. Her recipe calls for the chicken to be poached first in a spice-laden broth, then soaked in it overnight for the infusion to penetrate the meat. It is then fried until crispy and drained. The remaining oil is used for frying grated galangal and scattered over the chicken as a crispy garnish. I had always thought that the crispy bits were flotsam that had gotten loose while the chicken was being fried. But knowing that it’s galangal floss has helped me not feel so guilty about enjoying them. Since the star of this dish is the crispy galangal floss, be prepared to grate more galangal than is called for. It is so addictive … [Read more...] about Herbaceous lift to fried chicken

Inside The Cosmopolitan of Las Vegas’s Impressive Block 16 Urban Food Hall
Share to Twitter Share to Linkedin Block 16 Urban Food Hall at the Cosmopolitan of Las Vegas Photo: Jeff Green / Courtesy of the Cosmopolitan of Las Vegas When the Cosmopolitan of Las Vegas opened in 2010, it became the hotel for the well-heeled crowd. Dark interiors with purple accents gave the hotel a seductive vibe, only further driven home by the lobby’s 15-foot digital art columns that often showed silhouettes of unclothed women. Majority of its spacious rooms were outfitted with balconies, an unparalleled offering to this day. And its Chandelier lounge, draped in illuminated beads, was where you went to see and be seen. Over the past year, the property has undergone some changes, adding in ultra-exclusive penthouses for their high rollers; switching up their stores to include Sin City–appropriate necessities like Drybar and Reviv; and revamping their food and beverage program to include New York City and Los Angeles favorites like Momofuku … [Read more...] about Inside The Cosmopolitan of Las Vegas’s Impressive Block 16 Urban Food Hall
Half Moon Resort Is For Jamaican Dreamin’
Share to Twitter Share to Linkedin Horses in crystal blue water, white sand beaches, rum and sugar served in a coconut: this is the idyllic promise of Jamaica, the 3rd largest island in the Caribbean and one frequented by more than 4 million tourists a year. It’s a promise certainly delivered if you stay at Half Moon , the 400 acre resort that lays claim to nearly two miles of Montego Bay’s shimmering sands and water. I visited Jamaica this spring to take in the entire island, and 70 year old Half Moon is a well known must-stay on the island for a handful of reasons. The sheer size of Half Moon and its amenities is reason enough many couples and families don’t venture much from the property. With two miles of a private white sand beach, an equestrian center, 11 flood-lit tennis courts, and an 18-hole championship golf course, most guests stay active right on site. I was most impressed by the enormous, modern gym, complete with a spin room and friendly … [Read more...] about Half Moon Resort Is For Jamaican Dreamin’

Stop Buying Fancy Fire-Roasted Peppers And Make Them Instead
Share to Twitter Share to Linkedin The secret between good food and great food is really not a secret at all. It’s something that good home cooks and chefs alike know—it’s the finishing touch. You might ask yourself what does that mean? The finishing touch is what you add to a simple piece of grilled meat, poultry or fish to make it really special. This can be a sauce like Romesco sauce —think grilled asparagus which are good on their own but they’re great with Romesco sauce. Or it could be as simple as a healthy dollop of bright basil and Parmesan-rich pesto on top of a piece of grilled fish or even a boneless skinless chicken breast. Or my 1-Minute OMG Sauce that I make all summer long. But it can also be something a little more substantial and equally easy to keep in the fridge for dressing up whatever you cook or grill, like fire-roasted peppers. I make fire-roasted peppers all year-long because they literally can be used for sandwiches, … [Read more...] about Stop Buying Fancy Fire-Roasted Peppers And Make Them Instead

From the gourmet grilling connoisseur to the lazy cook to the guy who loves grilling but burns everything, here is something perfect for every father who cooks with gas, fire or smoke, at many different price points. Having written extensively on food, grilling and smoking for more than 20 years, I have personally tried, enjoyed and can enthusiastically recommend every single one of these providers.
