FRIED chicken is such a ubiquitous dish that we don’t often give it much thought. That is why when an Indonesian friend made this for a home party, I was surprised how much I enjoyed it and immediately asked her for the recipe. So here’s a shout-out to Emi Yanti Lubis who shared her family recipe with us. Turns out this is not just any fried chicken. Her recipe calls for the chicken to be poached first in a spice-laden broth, then soaked in it overnight for the infusion to penetrate the meat. It is then fried until crispy and drained. The remaining oil is used for frying grated galangal and scattered over the chicken as a crispy garnish. I had always thought that the crispy bits were flotsam that had gotten loose while the chicken was being fried. But knowing that it’s galangal floss has helped me not feel so guilty about enjoying them. (CNN) The day they wheeled 2-year-old Baelyn Schwab into surgery to get a new liver, her skin was orange, and she was delirious. "Her eyes didn't look like they were attached to her head anymore," her mom, Kelsea Schwab, told CNN Chief Medical Correspondent Dr. Sanjay Gupta. "They were just rolling all over. "She would still ask for bananas and ask for juice and ask for snuggles, kind of like she's still there, but not really," she said. Seemingly out of nowhere, Baelyn's liver had become so damaged that it could no longer clean ammonia out of her blood. She's part of a nationwide investigation by the US Centers for Disease Control and Prevention into recent cases of sudden severe hepatitis -- or swelling of the liver -- in 109 children in 25 states and territories. As baby formula shortage worsens, families take desperate steps
Like most new moms, 26-year-old Veronica Gutierrez's life revolves around feeding her three-month-old daughter, Alessandra. For the first month, that meant mostly formula. But that formula was hard to find. She drove from store to store, so shaken by the empty shelves she began pumping her breast milk around the clock, in hopes she could draw out enough to feed Alessandra full time. "I had just gotten home from the hospital and I was in so much pain - even just having to jump in the car trying to find the formula, I was almost in tears," Gutierrez said. "There was that uncertainty whether I was actually going to find the formula," she said. It’s a promise certainly delivered if you stay at Half Moon , the 400 acre resort that lays claim to nearly two miles of Montego Bay’s shimmering sands and water. I visited Jamaica this spring to take in the entire island, and 70 year old Half Moon is a well known must-stay on the island for a handful of reasons.
