The Berkeley, Calif.-based startup produces the fish by taking cells from tuna and cultivating them in a lab, feeding them the nutrients they need to multiply. After three weeks, the outcome is genuine, edible, fishing-free tuna meat. Finless plans to start selling the bluefin at the end of the year. So far it has served small test batches to journalists, usually mixed into croquettes or fish cakes. Mike Selden, the company’s founder and chief executive, plans to roll out the product in high-end restaurants, then move to lower-end restaurants, delis and eventually supermarkets. There seem to be a lot of foods that are "back" lately. Fat is back! Bacon is back! Eggs are back! Most of it is fueled by enthusiasm surrounding low-carb diets, Paleo, keto, Whole30, social media and perhaps a boredom with the more traditional dietary options like the Mediterranean diet. That's not a bad thing necessarily because it forces us to think about the fault in our dietary patterns, but as a nutritionist, one trend I am seeing a lot in my patients is the thought that red meat consumption is not as bad as everyone thought it was. Not so fast: Three new studies show that frequent red meat can lead to disease and an early death. One study found that dietary factors now amount for more worldwide deaths than smoking. Applebee's had the restaurant industry's comeback of the year in 2018. US same-store sales were up 5.5% in the first nine months of 2018, after years of slumping sales and dozens of store closures. "I love that line, Jack Nicholson in 'The Shining,' 'We're back!'" Steve Joyce, the CEO of parent company Dine Brands, told Business Insider in November. 2018 was a good year for Applebee's. And, it came after quite a few bad years. Applebee's sales were plummeting, with dozens of locations closing as the chain struggled to reach millennial diners.
